Yogurt - Recipe Experiment!

It's sure been a while since I posted anything! Alex is getting so big, he is crawling and even has little teeths! :) Yay! So, with that and working on building my new house, I've been pretty busy.
Lately, I've been experimenting with one of the most interesting milk-based products on the market - Yogurt. A good, plain yogurt (such as Activa, or even Greek yogurt if you want to go all-out) can take you pretty far. You can make anything from sweet to savory dishes, drinks, even delicious frozen yogurt!

I like to drain my yogurt for most uses, but you could probably swing a slightly runnier sauce or whatever if you dont have time or really feel like draining it. Most recipes call for a cheesecloth but since I happen to not own one of these (inexpensive but inconvenient) items, I just use a coffee filter inside a mesh strainer, set on top of a bowl. It works just as well, just make sure you don't over fill the filter ;)

So here are a few things I put together recently that came out pretty well :)

Frozen Yogurt
3 cups (720g) strained yogurt (see below) or Greek-style yogurt
3/4 cup (150g) sugar (or simple syrup)
1 teaspoon vanilla extract (optional)

Mix ingredients together and chill for at least 1 hour in refrigerator. Add to bowl of ice cream maker and freeze according to machine instructions.
Note: Add 1/2 c milk, 1c half and half for richer ice cream
(freezes more solid, best eaten immediately)


Fruit Salad
1 small bag of frozen fruit, thawed
1 container of plain yogurt
3-4 tablespoons of honey (or to taste)

Mix everything together in a big bowl. Serve!
You could use fresh fruit if you like, this is easier and faster.


Curry Chicken Salad
2 cans of cooked chicken (about 2 cups)
1 cup plain yogurt (strained)
1/2 cup Craisins (dried cranberries)
1/2 cup chopped celery
1 green onion, chopped
1/4-1/2 cup chopped pecans
1 chopped apple
1-2 tbsp curry powder (to taste)
ground black pepper (to taste)

In a medium bowl, mix together yogurt with curry powder. Blend in dried cranberries, celery, onion, and nuts. Add chicken, and mix well. Season with black pepper to taste. Chill 1 hour.
Variations (or options for leftovers): Serve on lettuce cups, or make sandwiches


Curry Yogurt Sauce
1/2 c strained yogurt
1 tbsp red curry paste
Mix together. Serve with fried tofu and crispy noodles

These are great, easy and inexpensive recipes that I would make many times. And since I live in the middle of a desert, they are fantastic for hot weather!
