Granola bars! Yum!

This is an excellent recipe for granola bars. Unless of course you're the type who likes those hard crunchy types of granola bars... I know you'll love these. Even if you don't like granola bars, everybody loves these! They DO! Yay, granola bars! Mmm! So good. And it only takes a few minutes of 'actual work' to make these. They have to sit for a few hours to harden up, but that is hands-free. I'm using the picture from the site Joyful Abode, where I got the recipe. My camera isn't working :( Her picture is nice and these are what mine would have looked like anyway, right?
This recipe is for using what I had on hand but you can view the original recipe here.
Granola Bars adapted from Joyful Abode
2 cups oats 1 cup almonds, crushed (with something heavy) 1 c raisins 1/3 cup brown sugar 1/3 cup honey 3 Tbsp butter 3 Tbsp peanut butter (crunchy or smooth) 1 tsp vanilla extract (optional)
1. Heat your oven to 400 F. On a baking sheet spread the oats and nuts and raisins and toast them for 4-5 minutes until... well, toasted. 2. In a pot on the stove, combine the rest of the ingredients and heat through 2-3 minutes, bringing the mixture to a simmer. 3. Combine the oat mixture and the syrup, make sure it all gets coated together. 4. Pour everything into a square pan lined with wax paper (or greased parchment, or foil or something). Pat down and cover. Let cool 2-3 hours, then slice.
