Oatmeal Cookies

MMmm. Cookies. My friend Leah (who now has her own blog!) is getting me way too excited about baking! She is soo evil, talking all about making cookies from scratch and stuff... So today I made Oatmeal cookies. Or I guess you could call them...
Oatmeal Cinnamon Raisin Chocolate Chip Cookies (the longer name makes it sound yummier, no?) based on the recipe from the book - Joy of Cooking
1 3/4 cups flour 3/4 teaspoon baking soda 3/4 teaspoon baking powder 1/2 teaspoon salt 1/2 teaspoon cinnamon 1/2 teaspoon nutmeg 1 stick butter, softened + 1/4 c oil 1 1/2 cups brown sugar 1/4 cup sugar 2 eggs 2 1/2 teaspoons vanilla 1/2 cup raisins 1/2 c chocolate chips 3 1/2 cups rolled whole oats
Preheat oven to 350°F. Whisk flour, baking soda, baking powder, salt, cinnamon, nutmeg into a mixing bowl. Beat butter, brown sugar, sugar, eggs, and vanilla with a hand mixer at medium speed. Mix flour mixture into butter mixture and mix well. Fold in raisins, chocolate and oats. Spoon 1.5 inch balls onto non-stick or parchment lined cookie sheet. Bake at 350°F for 6-9 minutes. Be careful -- oatmeal raisin cookies don't look done when they are, so they are very easy to over cook.
